CHOOSING:
Fresh Mexican cheese (queso fresco) has a lighter, tangier, milkier flavor and crumbles coarsely. Most domestically made, fresh Mexican cheeses are blander than their Mexican counterparts.
STORING:
Fresh Mexican cheese:
in the refrigerator, well wrapped, for a week or so.
