Creamy Queso Anejo Dressing
Servings: 1 1/4 cups

INGREDIENTS
- 3/4 cup vegetable oil, olive oil or a mixture of the two
- 1/4 cup very light vinegar (like rice vinegar)
- 3 tablespoons mayonnaise
- 2 to 3 tablespoons freshly grated Mexican queso añejo or other garnishing cheese such as Romano or Parmesan
- 1 scant teaspoon Salt
INSTRUCTIONS
Combine all ingredients in a blender jar and blend until smooth. Taste and season highly with additional salt, if necessary. Pour into a jar with a secure lid and refrigerate until ready to use. Shake well immediately before use.
