Quick Red Chile Adobo Marinade
Servings: 1 1/2 cups
INGREDIENTS
- 8 garlic cloves, peeled
- A scant scant ½ cup ground ancho chile powder (available from national companies, like McCormick, Mexican groceries and internet sites)
- ½ teaspoon ground cinnamon, preferably Mexican canela
- 1 tablespoon vegetable or olive oil
- ¼ teaspoon ground black pepper
- 1/8 teaspoon ground cumin
- 1 teaspoon dried oregano, preferably Mexican
- 3 tablespoons vinegar (apple cider vinegar is common in Mexico)
- 1 ½ teaspoons salt
INSTRUCTIONS
In a microwave safe measuring cup, measure 1 ¼ cup water, add the garlic and microwave for 1 ½ minutes. Pour the water and garlic into the blender jar and add the remaining ingredients. Blend until completely smooth. Cover and store in the refrigerator.
