Topolo 2.0 Margarita (aka Margarita de Tres Agaves)
Servings: 1 glass
I am totally in love with this margarita because it celebrates what three very different agave spirits bring to a margarita. (I know: sotol has fairly recently been declassified from the agave family, but—for the purposes of this recipe—I’m ignoring that.) There’s the classic brightness of tequila, the rich flavor and gentle smoke from mezcal and the beautiful herbaceousness of sotol.
INGREDIENTS
- Coarse Kosher salt
- 1 lime wedge
- 1/2 oz simple syrup
- 1/2 oz mezcal (choose one that’s not too smoky, one like Vida or Wahaca joven espadín)
- 1/2 oz sotol (like Noche Luna)
- 1/2 oz curaçao (we like Ferrand brand)
- 3/4 oz fresh lime juice
- 6-10 cubes ice (about ¾ cup)
INSTRUCTIONS
Spread the salt on a small plate. Moisten the rim of a 6-ounce martini glass with the lime wedge and upend the glass into the salt to crust the rim.
In a cocktail shaker, combine the tequila, mezcal, sotol, curaçao, simple syrup, lime and ice. Cover and shake vigorously until frothy and cold; tiny ice crystals will appear in the drink after about 15 seconds of shaking. Strain into the salt-crusted glass and serve immediately.
