Hierbas de Olor
USES: These bundles of drying marjoram, thyme and bay are the typical broth herbs in Mexico, though they can be used individually wherever you think appropriate.
FINDING: Bundles of hierbas de olor are available in many Mexican groceries, partially or fully dried.
CHOOSING: Herbs that are relatively unbroken and have a vibrant color are usually more full flavored than ones that have been force-dried in bleaching sunlight or poorly stored.
STORING: In a cool, dark, dry place, preferably in a sealed container, for up to 3 months.
